Incredible Edible Tubers – Workshop
2-day Workshop May 7-8, 2019
There are so many wonderful edible tubers that grow exceptionally well in the subtropical climates of Northern NSW and SE Qld. Robyn Francis shares her favourite tubers, how to propagate, grow, harvest, store and prepare them.
Learn about Taro, Cassava (Tapioca), Yukon, Yams, Jerusalem Artichokes, Turmeric, Galangal, Arrowroot, plus some unusual perennial vegetables.
We will go through the seasons, what to grow, when and how to harvest with hands-on harvesting.
• learn which ones have special requirements and how soon after harvest they need to be used
• which ones have alkaloids that require special treatment,
• how store them including clamp storage, dehydration and freezing,
• different ways to prepare and cook them – savoury and sweet dishes
• how to make your own homegrown cassava and arrowroot flour
• prepare Thai and Indonesian curry pastes from fresh garden ingredients.
The workshop concludes with a feast of tubers we have harvested and prepared over the 2 days.

Cost: $195 (special earlybird price $175 if you register and pay before April 12) covers course tuition, notes, M/A teas (both days) and special lunch on Wednesday.

This Garden-to-Table workshop will include hands-on harvesting and processing, so please wear suitable clothing and footwear. We will also cook up and taste test some of the unusual tubers and Robyn will share her favourite recipes.
Robyn Francis has been working local and internationally as permaculture teacher and consultant for over 30 years. She is also a passionate gardener and cook and collects traditional recipes in her travels for a diverse range of vegetables, herbs and spices. She grows and uses all the plants covered in the workshop at Djanbung Gardens. This will be a very interactive and hands-on workshop.
Djanbung Gardens is a world renowned permaculture education centre and demonstration farm that’s been featured in books and documentaries as one of the best examples of permaculture in the subtropics. Learning here is an inspiring experience in an environment where the plants and teachings are being practiced.
